You are probably pulling pieces out from the outside. Push them out from inside with your thumb.

How to Carve a Pumpkin

Cut the lid at an angle, scrape the carving wall down to about one inch thick, tape your stencil on and poke the outline, remove the paper, cut the smallest shapes first, then push the pieces out from inside. Scraping the wall thin is the step most people skip and it matters most.

Step by step

1. Cut the lid at an angle
Point the knife in toward the middle. The lid then rests on the hole instead of dropping inside. Or cut a hole in the bottom and set the pumpkin over the light.
2. Scrape the wall thin
Scoop the seeds, then keep going. Take the side you will carve down to about one inch. A thin wall cuts easier and lets far more light through.
3. Tape the stencil on
Trim close, snip the edges so the paper lies flat, and tape it down.
4. Poke the outline, then remove the paper
Holes every eighth of an inch along each black edge. Then take the paper off. Do not carve through it.
5. Cut the small pieces first
Start in the middle with the smallest shapes. The pumpkin is strongest before you have cut it.
6. Push out from the inside
Press each piece out with your thumb from inside. Pulling from outside tears the edge.

Light it safely

A tea light works. An LED light is better. It does not blow out, it does not cook the lid, and it lasts all night. Never leave a real flame alone.

Carving with children

An adult does the cutting. A child can pick the design, help tape it on, poke the outline and scoop the seeds. That is most of the fun and none of the blade.
